Even though I was away from my garden most of the summer, I still managed to get a pretty good harvest. Maybe I invented a new way of gardening - plant the seeds and disappear for the next 2 months...
Whatever my secret is, I'm still eating fresh vegetables out of my neglected garden. Although the peas finished in August, I just picked the last of the green beans last week. And I still have carrots and swiss chard...
The neat thing about the green beans I planted is that they're purple. They look great and no doubt have some extra antioxidants being that they're a darker colour. During the cooking process (steaming), the purple beans turn green. They're magical!
The beans are called Royal Burgundy Purple Heirloom Beans and taste good raw in salads, or just slightly steamed. No butter required...
Happy Cooking,
- Lesli
