A good reason to love potatoes

wasabi mashed potatosLet's celebrate the potato! Not only is February Potato Lover's Month, 2008 is the International Year of the Potato. Now granted, the Potato Lover's Month feels a bit made up, just a gimmick to sell more potatoes. But the United Nations General Assembly has declared this the International Year of the Potato, adopting a resolution to focus world attention on the importance of the potato in providing food security and alleviating poverty.

According to the Year of the Potato Web site:

The potato should be a major component in strategies aimed at providing nutritious food for the poor and hungry. It is ideally suited to places where land is limited and labour is abundant, conditions that characterize much of the developing world. The potato produces more nutritious food more quickly, on less land, and in harsher climates than any other major crop.

Of course the Idaho potato folks are joining in the festivities -- they're partnering with Unicef and 12 chefs who are sharing their favorite potato recipe as part of "Recipes for Relief." Visit their site and click on the Recipe of the Month -- 10¢ will be donated to UNICEF for each click (up to $50,000). And you'll score some yummy potato recipes!

I have to say, the Baked Idaho® Potato with King Crab and Gouda makes me look at the humble spud in a whole new light. (And I thought I was creative with my wasabi mashed potatoes.)
