A quick chocolatey treat for Valentine’s Day

chocolate cookie.jpg You must have chocolate on Valentine’s Day, right? Though this sweet and creamy cookie represents the home and hearth kind of love for me (I grew up on them) as much as it does the cupid’s arrow kind, it’s a perfect and easy treat to make for your sweet heart. It’s just as much fun to scoop out of the pot with your fingers (watch out – it’s hot!) as it is to make cookies.

Stovetop chocolate + peanut butter cookies

• 1 3/4 cups white sugar
• 1/2 cup milk
• 1/2 cup butter
• 4 tablespoons unsweetened cocoa powder
• 1/2 cup crunchy peanut butter
• 3 cups quick-cooking oats
• 1 teaspoon vanilla extract

In a medium saucepan, combine sugar, milk, butter, and cocoa. Bring to a boil, and cook for 1 1/2 minutes. Start the timer when mixture reaches a full rolling boil or they won’t form properly. Remove from heat, and stir in peanut butter, oats, and vanilla. For a fun messy cookie, drop by teaspoonfuls onto wax paper. For a prettier presentation, form with cookie cutters and scatter with sprinkles. Let cool until hardened if you can wait that long.
