
Amaranth is similiar in size to poppy seeds, but has a golden colour to it. Apparently, amaranth is an herb, but is treated as a grain because of it's texture and appearance.
Amaranth is gluten-free, and contains high amounts of protein, calcium and iron.
Beware: It is a natural thickener. If you make a soup containing amaranth, it will thicken the soup to a stew-like consistency.
