Apple Cider-Honey Vinaigrette

Friday night was my first attempt at making my own vinaigrette. Everytime I watch cooking shows, the chefs are always quick to whisk together a simple dressing for the salad entrees. So I thought hey, "how hard can it be?". Well, it's not. Vinaigrette is basically an emulsion of oil and vinegar. Once you tackle your first vinaigrette I can imagine you whisking in all sorts of other spices/ingredients to come up with something delicious for your salads.

INGREDIENTS:

apple cider vinegar, eyeball it
1 tsp of honey
1 tsp of spicy brown mustard
sprinkle of garlic powder
sprinkle of salt
sprinkle of black pepper
a pinch of dried basil
olive oil

Mix the 7 ingredients together first. Then whisk in olive oil. The oil should be more than the apple cider vinegar. Just keep stirring until the oil is incorporated completely.

This was our dinner Friday night. I didn't feel like cooking a heavy meal so I decided on grilling a steak, sliced thinly in strips then added them on a bed of quartered romaine lettuce, shredded carrots and red cabbage. It's a light dinner yet you're still getting your protein for the day :). This vinaigrette did not disappoint me at all. I was quite impressed by it actually. A small pat in the back for myself considering it was my first time to "whisk" in something for the greens. Now that I've done this I might be cleaning up my fridge and throw away those store bought bottles of dressing. Well maybe I'll keep the ranch bottle :-).
