

I always tell people that asparagus and bacon equals heaven. It sure is :) . That's usually the combination for a delicious side item but I kicked it up a notch by adding mushrooms and crispy garlic. What can I say, looking at the fresh asparagus inspired me to stay a little bit longer in my well-loved kitchen :) .
First, brown the chopped bacon in a non-stick skillet. Once brown and crispy, transfer into a bowl and set aside. Use the fat rendered from the bacon to crisp up the thinly sliced garlic(3 cloves). Don't over cook it. 1 minute is all you need. Probably less than that. Transfer the garlic into the same bowl that has the bacon.
Second, Use the same pan to sautee the asparagus. Stir a few times. Add the mushroom slices. Season with salt and pepper. The asparagus should still be crunchy. After maybe 4 minutes of cooking, turn the heat off. Transfer the whole thing in a platter. Sprinkle the crispy bacon and garlic on top.
Served with grilled steak and mashed red potatoes as shown below.
