Bacon Wrapped Beef and Asparagus

I couldn't decide what to cook for dinner last Friday and my husband was already home from work. I'm usually in the process of cooking when he walks into the door. But I was stumped that day. I knew it had to be beef coz we had chicken the day before and the day before that we had pork. We alternate our meat :) . Instead of grilling steaks and having steamed asparagus on the side, I decided to combine the two and wrap them in bacon.

Actually, I have a different version of this dish that I learned from my sister-in-law. Her recipe calls for chicken by the way which I've also made a few times. And there are caramelized apples on the aside. And, yeah I know more ands. The mushrooms and cheese were supposed to be stuffed with the asparagus. But the way I imperfectly sliced the beef thinly, it was impossible to stuff cheese and mushrooms inside it. So I decided to sprinkle the cooked mushroom around the bacon-wrapped beef then sprinkle the cheese on top instead.

INGREDIENTS:
thinly sliced beef
uncooked bacon, depends how many wraps you're making. 1 bacon per 1 wrap
4 cout of asparagus per 1 wrap
cooked sliced button mushrooms
shredded cheddar cheese

First, sautee sliced mushrooms in olive oil. Don't cook too long. Season with salt, pepper and dried basil. Set Aside.

Wrap the asparagus with the thin slice of beef. Then wrap the uncooked bacon over it. Repeat until you've wrapped all your asparagus. Lay the bacon-wrapped beef and asparagus on a lasagna pan. Scatter the cooked mushrooms on the pan, sprinkle shredded cheese on top. Cover with foil. Bake it in the over for about 35-50 minutes in 365F.

Optional: You can slice 1 apple, scatter around the pan with the wrapped beef. The baking process with caramelize the apples. It's really good. I recommend you do this :) .
