
I should really call this "leftover" fried rice since the ingredients are all, well, leftovers. Last 2 strips of bacon, last 2 scallions, leftover peas, leftover celery sticks from the crispy hot chicken wings dinner, and leftover white rice.

Except for the rice, I chopped everything finely. Heat up a little bit of oil, then brown the bacon. Add scallions and celery. Once cooked, add the rice, stir constantly so the rice are separated and not in clumps. Actually, you can avoid the clumps by separating them with your hands before cooking. So do this step beforehand. Back to cooking, add the leftover peas. Season with salt and pepper. Voila. Wasn't that easy?
You can certainly make this with any leftover meats you have in the fridge. Served as a side dish to lemon chicken.
