Bake it Up: Moist Apple Cake

There are definitely foods that are synonymous with fall, like pumpkins, of course. But also, squash, pears and apples.

In the fall apples are fresh and abundant. If you're lucky you have an apple tree in your yard. (I don't) Maybe you have a crab apple tree in your yard. (I don't)

Fall is a great time to use apples in your cooking, especially in your baking.

One of my favourite apple recipes requires very simple ingredients, yet still tastes great. (What more could you ask for?) I have used different types of flour with this recipe including kamut and oat flour, it always turns out great.

Moist Apple Cake

2 c. peeled, chopped Granny Smith apples
3/4 c. sugar
1 1/2 c. whole wheat flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
1/4 c. canola oil
1/2 tsp. vanilla extract
1 egg, lightly beaten

Directions:

1. Mix together apples and sugar in a bowl. Let sit for 10 minutes.
2. Combine flour, baking soda, baking powder, cinnamon and salt.
3. Combine oil, vanilla and egg.
4. Mix the wet and dry ingredients together.
5. Stir in apple mixture.
6. Spoon batter into a greased 8-inch pan.
7. Bake at 350 degrees for 40 minutes, or until toothpick comes out clean.
8. Cool on wire rack.

Tastes really good with a side of vanilla ice cream.
