

INGREDIENTS:
12 or more corn tortillas
1 strip of steak, sliced thinly
1 sm onion, chopped finely
1 can of black beans, drained
1 can of corn, drained
1 jar of taco sauce
shredded cheddar cheese
salt and pepper to season
Sautee onions, then add beef. Cook, then add black beans and corn. Season with salt and pepper.
In a medium baking pan, spread 1/2 of the taco sauce on the bottom of the pan, layer 4 corn tortillas, overlapping from each other. Add 1/2 of the beef mixture, then top with shredded cheddar cheese. Repeat the layering process, starting with the sauce, then the beef mixture, sauce and cheese. Top with last layer of corn tortillas, sauce and shredded cheese
Cover with foil, then bake in the oven, 365F for 20 minutes or until the cheese is bubbly.
