Baked Chicken-Pancetta Ziti

INGREDIENTS:
1 package of ziti, cooked accordingly
1 boneless chicken breast, finely cubed
3 pieces of pancetta, finely sliced
1 small yellow onion, finely chopped
2 cloves of garlic, finely chopped
1/4 cup of cream sherry wine
1 can of spaghetti sauce
1/4 cup of the pasta water (set aside from when cooking the ziti)
sprinkles of dried basil and dried oregano
salt and pepper
1 tbsp of sugar
shredded cheddar cheese

Cook the pasta according to the package. Set aside 1/4 cup of the water.

In a skillet, slightly brown the pancetta in a little bit of heated olive oil. Add the onions. When translucent, add the garlic. Then the cubed chicken. Cook, stirring once in a while. Once cooked, add the seasonings : dried basil. dried oregano, salt and pepper. then the cream sherry wine. Stir everything together. Let the sherry cook for a bit, maybe a minute or so. Pour over the spaghetti sauce. Stir in 1 tbsp of sugar. Also add the reserved water from the ziti pan.

Simmer for 3 minutes, stirring in between. Combine the 3/4 of the chicken mixture sauce and the ziti pasta. Set aside 1/4 of the sauce. Mix the sauce and pasta together with 1/2 cup of shredded cheddar cheese. Transfer the whole thing in a lasagna pan. Pour the remaining chicken mixture sauce on top, then more shredded cheddar cheese.

Bake in the oven, 375F for about 20-25 minutes.

This was sooooo delicious. I served it with garlic bread. I had to stop myself from having another slice after my second one. Don't forget to "dump" grated parmesan cheese on top. A glass of wine would be nice too :) .
