

INGREDIENTS:
2 flounder fillets
butter
juice of 1/2 lemon
salt and pepper
chopped 2 fresh tomatoes
dried basil
finely chopped parsley
grated parmesan cheese
In a baking pan, lay down the flounder fillets, Dot the butter on top of the fish, squueze the lemon, season with salt and pepper, add the chopped tomatoes, sprinkle dried basil, then the fresh parsley. Lastly, sprinkle grated parmesan cheese on top. Bake in the oven for 25 minutes, 350 degrees or until the fish are flaky. Use a fork to test it.
This is soo good. I kinda overcooked my fish but hey, at least next time I know not to cook them more than the alloted time, heh?. I had more fish in the pan btw. I just put those two pieces onto a plate for a nice picture, :).
PS: Don't skip the grated parmesan cheese because it's what makes this dish even more delicious.

This was SOOO GOOD! I made this tonight, and even my 7 year old daughter loved it. I used fresh basil since I had it. Originally I thought that tomatoes and basil on fish sounded a little strange, esp. with the cheese, but it was fabulous!! I will make this again and again. Thanks for sharing!!!

This sounds like a good and easy recipe, but I've never had flounder. Is it very fishy smelling? We usually eat salmon or tuna, neither of which has that strong fish smell that we hate.
