Baked Sweet Potato: Do it Right!

Did you know that most of the nutrients in a sweet potato are right next to the skin? The sweet potato is a complex carb, meaning it doesn't instantly turn to sugar in your body - it has more substance than pasta and rice. This potato is very high in vitamin A. That's why you want to make sure you peel the skin off as carefully as possible. The best way to approach this is to bake your sweet potato prior to peeling it.

Pierce the skin in several places and place 3-4 sweet potatoes in a 400 degree oven. Bake for about 40 minutes. Let sit for 10 minutes. Peel off the skin when the potatoes are cool enough to handle.

Another way to deal with a sweet potato is to make potato sticks: oil, paprika (or chili powder), 4-5 unpeeled (but scrubbed) sweet potatoes chopped into sticks. Mix together. Bake at 400 degrees for about 40 minutes. Sweet!
