
It's unfortunate that muffins have gotten a bad name. Likely due to those honking big ones that Costco kicks out - those muffins are too big and too gooey. Sometimes it's nice just to have a tasty muffin with a bit of substance without having to compromise on flavour.
It's hard to find a good muffin recipe that can measure up to my stringent requirements. Does it taste good? Does it freeze well? Is it healthy without tasting like cardboard? Is it moist, yet not gooey? Does it come out of the muffin paper easily? Well, I hit the jackpot with this muffin recipe. After I fiddled around with the bran and wheatgerm combination a bit and tried it with and without bananas, I decided it was a winner. I think it's the dates that complete it...Dates complete me...(sigh)

3/4 c. bran
1/4 c. wheatgerm
1 c. buttermilk (If you don't have buttermilk on hand, add 1 T. of white vinegar to 1 c. of milk and let sit for 10 mins. - instant buttermilk!)
1/2 c. brown sugar
3/4 c. whole wheat flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1 egg
1/3 c. melted butter
2 ripe mashed bananas
1/2 c. chopped dates
1. Preheat over to 350 degrees.
2. Soak bran in the buttermilk for 15 minutes.
3. In a medium bowl mix together the brown sugar, flour, baking soda, salt and cinnamon.
4. Stir in the egg, butter, bran mixture, wheatgerm and dates. Stir until just combined.
5. Pour batter into muffin pan lined with muffin papers.
6. Bake 15-20 minutes, or until toothpick comes out clean.

I googled "banana date bran" muffins and this recipe came up- amazingly, you perfectly articulated the "must-have" and "can do without" ingredients that I would have chosen for muffins as well! I can't wait to try this recipe.
These are great! I didn't have any bran, so I used bran flake cereal, and I doubled the dates (although I think next time I won't).
