
These chunky Halloween-colored little treats pack a nutritious punch and are tasty to boot. With the beans bringing fiber, protein and antioxidants to the table, and the humble sweet potato supplying fiber, complex carbohydrates, protein, vitamins A and C, iron, and calcium, I’d eat them just for the health boost. But throw in some sautéed onions, simmering vegetable broth and roll it all into a warm tortilla and I’ll tuck into this dinner with total epicurean glee.
I have adapted our recipe from the version in Sarah Kramer’s fun book, “La Dolce Vegan” — with a final product that is decidedly not vegan.
You'll need:
2 medium sweet potatoes, diced
1 small onion, finely chopped
1 tablespoons olive oil
One can black beans, drained and rinsed
1 cup vegetable stock
2 garlic cloves, minced
Seasonings to taste: ground mustard, cinnamon, cayenne pepper, salt
4 large wheat tortillas
1 cup shredded mozzarella (optional)
½ cup sour cream (optional)
A couple handfuls of baby spinach
To prepare:
• Boil the sweet potatoes in a large pot of salted water. In the meantime, sauté the onions in olive oil until translucent. Add the garlic when the onions are nearly finished. Add the black beans, vegetable stock and seasoning. Simmer, uncovered, over medium-high heat until the stock is absorbed.
• Warm the tortilla shells (sprinkled liberally with cheese).
• Drain the water from the sweet potatoes and set aside. When the beans are finished add the potatoes and stir.
• Divide the potato and bean mixture among the four tortillas. Top with baby spinach and sour cream, roll up and dive in. Bring a napkin – they’re deliciously messy.
(For families of two, pack your leftover potato and bean mixture with a little cheese in your Tupperware, and a tortilla shell and spinach in another container. Quick and easy to heat and assemble the next day at work.)

The rice is a good idea! It would probably be good with some cubed sauteed tofu too.

OMG - These are one of my favorite dishes. I first heard about these many many months ago and to this day I still share this recipe with many of my friends. I also add rice to mine as an additional filler. They're addicting!!! You must try them.
