
A blintz is a thin pancake that contains either fruit, cheese, or meat. Blins were borrowed into Yiddish as בלינצע (blintse) and came into English in the form of "blintz".

Blintzes may be prepared and served in three basic ways.Frozen pre-packaged blintzes may be fried.They may be eaten "as is". In this case the batter may contain various add-ins, from grated potato or apple to raisins. Blini are quite common in Eastern Europe and are more solidly-filled than the spongy pancakes usually eaten in North America.They may be smeared with butter, bacon fat, jam or caviar and possibly folded or rolled into a tube. In that form they are similar to French Crêpes. The caviar filling is popular during Russian-style cocktail parties.
Lastly, a filling may be rolled or enveloped into a blintz and lightly fried, sautéed or baked. Possible fillings are jam, fruit, cottage cheese or other cheese, ground meat, potato, or poultry.
In our family, blintzes are eaten when nobody has the energy or time to prepare a full meal. I usually use frozen blintzes to make a blintz casserole, which, when served with a tossed salad, makes a hearty and deliciously light meal.
Blintz Casserole
Ingredients:
* 12 frozen blintzes
* 1/2 cup melted butter
* 2 cups sour cream
* 5 eggs
* 1/4 cup sugar
* 1 tsp. vanilla
* dash salt
* cinnamon
Melt butter in casserole dish.
Dip blintzes in so butter is on both sides of blintz.
Combine all ingredients except cinnamon and pour over blintzes. Sprinkle with cinnamon and bake 1 hour at 325 degrees.
