Bow-Tie Beef & Spinach Lasagna

I must admit that this dish was made out of another dish I was already cooking. I originally thought of making beef stroganoff out of the box of bow-tie pasta but as I was sauteeing the onions and beef, I remember the unopened container of Ricotta cheese in the fridge. Then I saw the can of spinach in the pantry. It also dawned in me that I still have half a bag of shredded mozzarella cheese in the fridge. The simple stroganoff that I planned for dinner last ngiht turned into a pan of cheesy lasagna.

Seriously, sometimes I amaze myself with the dishes I come up with in my kitchen. At the last minute, no less.

INGREDIENTS:
1 small red onions, chopped
1 beef, steak, sliced in strips
6 button mushrooms, sliced thinly
a sprinkle of dried basil
1 package of bow-tie pasta, cooked accordingly
2 lb container Ricotta Cheese
1 can of spinach, drained
half a bag of shredded mozzarella cheese

Cook the pasta, Drain the water off, then set aside.

Sautee onions then add the beef strip. Let the meat cook. Then add the mushrooms. Cook for about 2 minutes. Season with dried basil. Gently stir in the spinach.

In the big pot, combine the pasta, ricotta cheese, and the beef and spinach mixture together. Make sure you don't add the liquid from the beef and spinach. Just gently fold everything together.

Transfer the whole thing in a lasagna pan. Sprinkle shredded mozzarella on top. Bake in the oven for about 15-20 minutes, 355F.

Don't forget to sprinkle grated parmesan cheese on top :) .
