Butterscotch Cupcakes

I had a craving for something sweet this past Friday but I knew I didn't have anything chocolate to make cookies or brownies. Not even to make a simple fudge squares. My grocery trip was scheduled the next day so my pantry was looking a little bare. Of course I get the craving the day before I can get ingredients. Don't you just hate that?. Still, I wanted to make something so I opened my cupboard and hoped I'd find an ingredient that will trigger my brain. Lo and behold I found a 6 oz jar of butterscotch ice cream topping. I was already thinking of making cupckaes but I didn't want to make just plain ones that's why I was searching my cupboard for a key flavor to give it a kick. So butterscotch it is.

For the Butterscotch Yellow Cake:
1/2 cup butter
1 1/4 cups sugar
1 tsp vanilla
3 eggs
2 cups flour
2 tsps baking powder
1/4 tsp salt
2/3 cup milk
1/2 jar of butterscotch ice cream topping (use the remaining for the frosting)

Cream butter, sugar and vanilla together. Add eggs, one at a time, beating thoroughly after each addition. Beat until light and fluffy.

In a separate bowl, stir flour, baking powder and salt together. Add to the creamed mixture, alternately with milk, beating after each addition. Fold in 1/2 jar of the butterscotch.

Pour 2 spoonfuls into each buttered muffin pan, or put muffin paper cups on the muffin pan. Bake at 375F 25-30 minutes. Remove from oven; let stabd for 5 minutes and remove onto cololing racks. Cool completely.

For the Butterscotch Frosting
6 tablespoons butter or margarine
1 1/2 teaspoons vanilla extract
3 cups confectionary sugar
1 1/2 tablespoons milk
2 spoonfuls of butterscotch topping

Cream butter with vanilla extract. Add confectionary sugar gradually, beating thoroughly after each addition. Stir in milk and the butterscotch. Beat until frosting is of spreading consistency.

Frost the cupcakes once completely cool.

Surprisingly, when my son had a taste, he noticed the butterscotch flavor. "Mom, this tastes like butterscotch". Awesome. He's starting to be a real good foodie I think. For a picky eater like him, recognizing a flavor is to me an accomplishment :).
