Chicken Lasagna

INGREDIENTS:
1 package of lasagna noodles, cooked
4 boneless chicken breasts, cubed
1/2 onion, finely chopped
1 jar of alfredo sauce
1 jar of water
1 tsp of basil
a sprinkle of garlic powder
salt and pepper for seasoning
sliced button mushrooms
1 container(2lbs) of ricotta cheese
shredded mozzarella cheese
shredded cheddar cheese
olive oil for saute'ing

In a pan, heat a little bit of olive oil, saute' onions, then the chicken. Let that cook, then add alfredo sauce. Pour water on the same jar, add it to the chicken mixture. Stir then season with garlic powder, basil, salt and pepper. Cook for another 3 minutes or so.

In another pan, slightly cook the mushrooms in olive oil. Season with salt and pepper. When cooked, fold in the mushrooms with the ricotta cheese in a bowl.

Spread a little bit of the chicken-alfredo sauce at the bottom of the lasagna pan, evenly. Layer cooked lasagna noodles, evenly spread the ricotta-mushroom mixture, then the chicken-alfredo sauce, sprinkle 1/3 of the mozzarella cheese. Repeat the process, this time try to lay the lasagna in a different direction. Repeat the layering process until you've used up everything. Sprinkle sheredded cheddar cheese on top as the last step. Cover with foil, then bake in the oven for 35 minutes, in 370 degrees.

Take the pan out and let it stand for about 15 minutes before cutting into it. Serve with baby spring salad dressed with apple cider - honey vinaigrette.
