Chicken Salad

I could eat chicken salad every day of my life for lunch. I love it. There is something about cold chicken being so much tastier then when it's hot. I'm not sure why, but any time I find a new way to make chicken salad, I'm all on it.

Chicken Salad

Ingredients:


For dressing:


  1. Cut cooked chicken into bite sized pieces. Combine with the rest of the vegetables and lettuce.
  2. Prepare the dressing and keep aside. Just before serving toss the the chicken and vegetables in the dressing and serve.

    I have also prepared a fruit salad with the same dressing as for the chicken salad, omitting lemon juice. I combined bite sized pieces of pineapple, apple, peppers, sprouts and lettuce with ginger-honey-pepper dressing and the resultant salad provided a refreshing crunch. You can even combine the fruit and chicken salads for a delightfully different chicken salad. A light summer lunch on a hot day.
