
Well, I’m back on the blog. Likely I wasn’t missed. Due to modern technology I was able to write and predate my posts ahead of time. So, you might have thought I was in my kitchen, but really I was random camping (off the beaten track) with my family in our vintage trailer, making our way to the edge of Western Canada. Yes, I touched the ocean, and no, I didn’t cook anything that required more than one pot. No, I didn't have a dishwasher and, yes, I used paper towel to wipe my cookware clean.
At one campsite we actually had to use water to wash out a dirty pot. (Just paper towel wasn't going to cut it.) So, my husband offered to go down to the river to wash it. I thought that was decent of him, until I discovered he was swishing rocks around in the pot in hopes of not actually having to clean the gooey pot with his hands. Normally one might laugh and even congratulate him on his clever idea to use rocks to scour and clean - but it was my favourite Lagostina pot! Clearly he didn't realize how much I paid for that piece of stainless steel!
I did, however, whip up a delicious chili one night while camping by a river full of frogs and gold.
Whether you’re camping in a tiny trailer or living it up in the comfort of your roomy house, you’ll like this chili. Fresh tasting with chunks of turkey sausage…
Ingredients:
1 T. olive oil
1 large can of diced tomatoes
1 can of tomato paste
1 can kidney beans
1 onion, diced
2 cloves of garlic, minced
1 red pepper, diced
1 green pepper, diced
1 lb. of turkey sausage, cut in coins and then in half.
2 T of chili powder (or to taste)
Directions:
1. Heat oil in a large pot. Add onions. Add garlic.
2. Add peppers. Add kidney beans.
3. Add tomatoes. Add tomato paste.
4. Add chili powder. Bring to boil and let simmer for 15 minutes.
5. Add turkey sausage. Simmer for 15 more minutes.
I like serving my chili with toppings like sour cream, grated cheddar and dried red pepper flakes. Yes, we used paper plates. Hey, when there's no running water...
