Chocolate Chip - Crunchy Peanut Butter Cookies

Everybody knows peanut butter is good. Chocolate is even better. You combine them together, well, you'd probably think you died and gone to heaven. My son and I were supposed to make this yesterday while he was off from school but I had other chores I needed to do like loads of laundry, so I didn't have time to make cookies with him. So I promised that I would make them today while he was at school. By the time he got home they were happily waiting for him, in the cookie jar. My sister-in-law stopped by in the morning while I was preparing the ingredients so I told her to come back in the afternoon so my nephews (4 boys) can have some too.

INGREDIENTS
1 cup butter (2 sticks), room temperature
1 cup of brown sugar
2 eggs
2 1/2 cups flour
1 tsp baking powder
1 cup crunchy peanut butter
1 package semi sweet chocolate chips

Preheat the oven to 375 degrees/ Grease baking sheets

Put the butter and sugar in a mixing bowl and beat until pale and creamy. Beat in the eggs, then add the baking powder and peanut butter. Beat until the ingredients are thoroughly mixed. Stir in the chocolate chips.

Place heaped teaspoonfuls of the mixture on to the greased baking sheets; space well apart to allow the cookies to spread while baking.

Bake the cookies until risen; they will still be soft to the touch. Transfer the cookies to a wire rack to cool.

The recipe from the cookie book only called for 'crunchy' peanut butter. It is called Peanut Crunch Cookies but I applied my own twist in it by adding the chocolate chips, hence the CHOCOLATE CHIP-CRUNCHY PEANUT BUTTER COOKIES title. I'm glad I did coz like I told my sister-in-law while she was leaving, "peanut butter and chocolate, there's nothing better than that". Nothing indeed.

Don't forget to enjoy the cookies with a glass of cold milk!!
