Chocolate Chunk Banana Bread

Here's the chocolate version of my plain banana bread. This time I used chunks instead of chips. Family's favorite. We literally fight over the first slice when I make this. The whole afternoon, my son kept checking on me..LOL. Hubby was behind me when I cut the first slice. Yup, we're chocolate-banana bread fools.


INGREDIENTS:
1 cup sugar
1 stick of butter, room temperature
2 eggs
3 ripe bananas, mashed
1 tsp milk
1 tsp ground cinnamon
1 tsp nutmeg
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
half a bag of chocolate chunks

Preheat the oven to 325 degrees. Grease a loaf pan with butter generously. Dust it with a sprinkle of flour.

Cream butter and sugar in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.

In a small bowl mash the bananas with a fork. Stir in the milk, nutmeg, and cinnamon.

In another bowl, mix together the flour, baking powder, baking soda, and salt.

Add the bananas mixture to the creamed mixture and Mix until combined. Add dry ingredients, mixing until flour disappears.

Pour batter into prepared pan and bake 1 hour to 10 minutes, or until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto a rack and cool completely before slicing.

Fold in chocolate chunks into the mixture before pouring into the loaf pan. Just use half a bag. I made the mistake of putting too much so the picture shows it's more moist than I wanted to be. But it was delicious as ever :)
