Christmas Baking: Brown Sugar Shortbread

As I sit here sipping my Cafe Americano (home brewed), I am feeling pretty caught up with Christmas.

Don't bother hating me, as this is the very first Christmas in my adult life that I feel like I have Christmas covered - and I still have another day to actuallyenjoy rather than running around doing last minute Christmas shopping and wrapping.

So, here's to all those years I spent freaking out right up until 4 pm on Christmas Eve. And here's to hoping that I'm starting a trend for myself. A trend that has me enjoying the days leading up to Christmas - not missing them in my flurry of last minute errands and personal over expectations.

Here's some of my favourite cookies that I baked earlier this week...These cookies require barely any ingredients and provide a nice change from the traditional shortbread cookies.

Brown Sugar Shortbread

Ingredients

1 c. butter
1/2 c. brown sugar
2 tsp. white sugar (I forgot to put this in, but they still taste great!)
1 egg
1 tsp. vanilla
2 1/2 c. white flour

1. Preheat oven to 350 degrees
2. Cream the butter & sugar
3. Add egg and vanilla
4. Mix in flour
5. Roll dough into walnut size balls
6. Flatten with the bottom of a water glass, or use a cookie stamp to press the cookie down gently. Be sure to keep that cookie at about a 1/3 thickness.
7. Bake for 10 minutes, or untili just starting to brown lightly. Err on the side of underbaked.
