Cinco De Mayo: Holy Guacamole!

Cinco De Mayo (Spanish for the 5th of May) is a national holiday in Mexico that has definately caught on in the States and Canada. It commemorates the victory of the Battle of Puebla in Mexico on May 5, 1862.

I say give me a reason to celebrate by eating Mexican influenced fare, and I'm there!

Let's start with one of my all time favourite appetizers - Guacamole...Start with a slightly soft avocado. They are usually pretty hard in the store, so to ripen them up you can place your avocados in a brown paper bag until ready to eat. This takes about 2-5 days. You can hasten the ripening by adding an apple or a banana...Did you know that an avocado is a fruit???

2 avocados
2-3 garlic cloves
1-2 tsp. lime juice
1/4 tsp. salt
red onion to mix in or garnish

1. Mash the avocados
2. Press the garlic and add to avocados
3. Add lime juice & salt
4. Enjoy with tortilla chips, pita, or use as a side dip for quesadillas & tacos...

Tips & Hints:

Cutting the avocado: Cut the avocado in half. Pull the two halves apart. Impale the knife into the avocado pit so that the knife is slightly stuck into it. Gently turn the knife and the pit should pop out. Score the two halves of avocado with a knife, but use a spoon to scoop out the avocado meat.

Hey! My friend told me to leave the avocado pit in the guacomole to keep the avocado from turning brown...and it works! (I have smart friends...)
