
If you're like me and you love fresh baked cookies but can never seem to find the time to whip up a batch from scratch do like I do and keep a batch of your favourite pre-made cookie dough in the freezer at all times. Your friends and family will marvel at your preparedness and if a pal or spouse has had a bad day a warm and gooey cookie is the perfect pick-me-up! Here are some tips that will help keep your "ice box" cookie making delicious and easy peasy!
Line a baking sheet with wax paper. Portion out the dough exactly like you would if you were to bake the cookies right away. Stick the sheet into the freezer for a few hours until the dough is mostly frozen. Make sure the dough is firm and not sticky or gooey. Once the pre-cookies are frozen remove them from a tray and put them into a Ziploc Freezer Bag (one of my very favorite kitchen items). Write the name and baking directions right on the baggie and when anyone's in need of a sweet-treat you'll be there...cookies in tow!
P.S. Cookies cook the best when they're completely thawed so plan your baking at least 2 hours in advance!
