
I just came across "Cooking with Dog" on YouTube and it's great. Before you start dialing PETA, I need to let you know that Cooking with Dog doesn't involve a pet-related sacrifice. It is a channel featuring a woman cooking traditional Japanese dishes like okonomiyaki (egg pizza) and kaisendon (sashimi rice) while a talking dog narrates. The dog's voice-overs sound much like Robin Williams imitating a Japanese man who is in turn, imitating Robin Williams as Mork. While the deadpan chef dices and slices, the dog sits patiently waiting for scraps. This is by far one of the most entertaining shows I've seen and even though I know the talking dog is a gimmick, I can't help but think this recipe looks as delicious as some of the creations on Iron Chef.
KAISENDON: Japanese Rice Bowl with Sashimi
Kaisen translates to "fresh raw seafood" while Don translates to "rice bowl". This simple recipe is a really refreshing meal for a hot summer day.
Ingredients
360cc Rice (1 1/2 u.s. cup)
400ml Water (1 2/3 u.s. cup)
1/2 Cucumber sliced lengthwise
1 Myoga Ginger sliced lengthwise
6 Shiso Leaves, stems removed and chopped in thin strips
Newly Harvested Ginger, thinly sliced
White Radish Sprouts, cut in half with roots removed
1 Long Green Onion, chopped
50g Newly Harvested Onion (1 3/4 oz), thinly sliced
150g Maguro - Tuna (5 1/4 oz)
2 Scallops
Wasabi
1 tbsp Soy Sauce
1 sheet of Toasted Nori torn into small pieces
Toasted White Sesame Seeds
Directions
1. MAKE THE RICE: Wash rice 3 times. Drain it well and transfer it to an earthen pot and add 400ml water. Leave to soak for 30 min. Bring to a boil at high heat and then reduce heat to low. Cook for 12min then turn off stove. Let sit for 15 min.
2. SEASON THE TOPPINGS: Dissolve wasabi in soy and add to toppings.
3. PLATE THE DISH: Fill a bowl with rice halfway and put half of the nori, sesame seeds, cucumber, ginger, shiso, myoga, radish sprouts, white onion and green onion on top. Cover with another scoop of rice and layer with the other half of nori, sesame seeds, cucumber, ginger, shiso, myoga, radish sprouts, white onion and green onion. Add scallops and tuna as well. Serve and enjoy.
