

Thanksgiving Day in the US is over. Thank goodness. During holidays, one staple dish in my table is the Cornbread Casserole. A friend of mine made this one time for Thanksgiving and ever since then it has become a "famous" side dish in my family. Not only is it delicious, it's also so easy to make. Friends and other family members ask me for the recipe all the time, or to bring it during potlucks.
INGREDIENTS: ALL IN A RATIO OF 2
2 cans of corn
2 cans of creamed corn
2 boxes of corn muffin mix
2 bricks of softened cream cheese
Mix everything together in a huge bowl. Make sure the cream cheese are broken apart and distributed equally onto the mixture. Transfer in a casserole dish, bake in the oven for about 45 minutes, 365degrees.

Don't be alarmed if it's a little soft inside. It's a casserole after all. It's even better the next day :)
