Cucumber Salad

As an integral part of a meat-eating family, sometimes I crave something to counter balance my meal. To be specific, something sour/vinegar-flavoured. A bowl of cucumber salad would do the trick for me. You could find this as a staple side dish in some Filipino dining tables. My family included. Interestingly enough, this cucumber salad could just as easily be a variation of a Jewish cucumber salad.

2 cucumbers, sliced thinly, rounds
1/4 cup of vinegar
salt (eyeball it)
black pepper (eyeball it)
1/2 tsp of sugar
sprinkle of red pepper flakes(optional)

Just mix everything together. Keep it in the fridge for at least 30 minutes. It's better if served cold.

This salad is actually perfect as a side item during BBQ days. It will match perfectly with kebabs, ribs and barbecue chicken. It's still winter but once summer rolls around, I hope you add this in your BBQ menu.
