Easy Peesy Egg Sandwich

Weekend mornings in my home means a hearty breakfast. None of that bowl of cereal that I hurriedly serve my son and husband before school or work, respectively. On a Saturday or Sunday morning after hanging out with the whole family in our bed, I am usually in my kitchen cooking up eggs, taters and bacon. Sometimes I also either make fluffy pancakes, muffins, or french toast.

egg-sandwich1.jpgLast Sunday, before goin to Church I decided to make egg sandwiches for everyone. This is a no-sweat task coz all you have to do is scramble 4 beaten eggs (with 1 tsp of milk, salt and pepper). Lay the eggs on 1 half of the toasted wheat bread, top with a slice of cheese, then the last toast. The cheese will slightly melt from the warm eggs. I told you it was easy.

Another variation of this which is actually my son's favorite is frying the egg over-easy or however you like your egg to be cooked. My son calls it as "the round egg" :). So go ahead try this egg sandwich sometimes. Your kids will think you are the coolest person ever. It beats going to the drive-thru at McDonalds in my opinion.
