

I saw the recipe from the September issue of All You magazine and I've been waiting to make it as soon as I have Vanilla ice cream in the freezer. Coz cobblers are better with ice cream. Agreed? :)
INGREDIENTS:
1 cup flour
pinch of salt
1 cup sugar
1 tbsp baking powder
3/4 cup milk
1 tsp vanilla extract
1 stick of butter, melted
1 can (20oz) pineapple chunks in juice, drained
Preheat oven to 375F.
Mix flour,s al, sugar, baking powder, milk and vanilla extract in a bowl. Stir until it forms a smooth batter. Gently stir in melted butter.
Spread batter evenly in a medium sized baking pan. The batter will be thin. Then scatter the pineapple chunks evenly on top.
Bake until pineapple has fallen to the bottom and top is puffed and golden brown. Test it by slightly touching the middle. If it springs back, then it's done. Baking time is 25 minutes or so. Cool cobbler slightly. Serve warm with vanilla ice cream on top.
This is so easy to make and so delicious. So if you want something not so complicated like our delicious peach cobbler, try this out sometime.
