Fajitas Texanas

I already had the ground meat thawing yesterday for our hamburger dinner but my husband called me from work and suggested going to our favourite Mexican restaurant called La Cocina, so of course I was happy to oblige. I do love to cook in my kitchen but that doesn't mean I would pass up an opportunity to go to a nice restaurant. Not at all :).

For my dinner I ordered a dish called Fajitas Texanas. It had shrimp, beef, chicken, green peppers, tomatoes and onions. Plus a side plate of rice, refried beans, shredded lettuce and sour cream. When you order this you get 4 warm flour tortillas and you get to wrap your own fajitas. It was a huge plate for me so after my husband ate his own enermous order of Chicken Enchiladas, he made himself a fajita from my skillet as well. Even after I ate my 2 fajitas, and husband had his 1, I still had plenty of leftovers which I ate with gusto for lunch today.

PS: my son had a huge plate of cheese quesadilla and fries. :)
