
Life is good when you can whip up a decent Alfredo sauce. The kids are happy, the husband thinks you're gifted and well, geez, it's so handy if you're craving that kind of creamy, cheese induced sauce.
I have done alot of experimenting with the type of pasta I use when I have an Alfredo sauce to serve. One of the most compatible noodles for Alfredo sauce is Rotini. The curls hold the sauce so well!
Most of the time I serve Alfredo Sauce with pasta and that's it. This time I had some leftover roasted chicken, so I diced it up and tossed it into the sauce.
Alfredo Sauce
2 c. milk (I usually use skim)
2 T. flour
2 T. butter
2-3 cloves of garlic (depends on your taste for it)
1 T. cream cheese
1. Melt butter in a pan. Add garlic.
2. Cook garlic for a minute. Add flour.
3. Mix as best you can, it will be dry. Add milk, slowly, using a whisk to blend the flour mixture in with the milk.
4. Add cream cheese. Blend with whisk.
5. Whisk until all the lumps are gone. Add more flour if you would like the sauce thicker. Add more milk if you would like the sauce thinner.
6. Serve over the pasta of your choice.
