
My son is home for another day from school so this morning it meant giving him something else for breakfast instead of the usual bowl of his favourite cereal. I think besides being able to play XBOX, having pancakes for breakfast is why he loves vacation days.
INGREDIENTS:
2 cups of flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
2 eggs
1 1/2 cups milk
1/4 cup vegetable oil
butter, syrup and whipped cream for the topping
In a large bowl, whisk together flour, sugar, baking powder and salt; set aside
In a medium size bowl, beat eggs lightly. Whisk in milk and oil.
Gradually pour milk mixture into dry ingredients, whisking continually, just until dry ingredients are moistened and only a few small lumps remain
Lightly cover a large skillet with oil and heat over a moderately high temp until a drop of cold water will dance across the skillet - usually takes 1 to 2 minutes
For each pancake, pour 1/4 cup batter onto the skillet. Cook until bubbles form on the surface and underside is golden brown- 2 to 3 minutes typically. Turn and brown the flip side.
