Grilled BBQ Chicken

Any grilling that involves big pieces of chicken, I always remind people to parboil the meat first. This helps cook the inside meat and preserve the skin once it's grilling time. Coz you don't want to burn the outside part while the meat inside is still pink. And we all know we can't eat raw chicken. So what goes in the parboiling process? Easy. All you have to do is put the chicken in a big pot, pour enough water to cover the meat, then boil for about 10-15 minutes. The time depends on how much meat you're parboiling. Of course the more meat, the longer time.

Once chicken is parboiled, drain the water and marinate with your marinade of choice. Last Saturday I chose BBQ sauce.

INGREDIENTS:
1 cup ketchup
1/4 cup white vinegar
2 tsp worcetershire sauce
2 tbsp honey
2 tbsp brown sugar
juice of half lemon
a couple of drops of hot sauce

Just whisk everything together and pour over the parboiled chicken. Marinate for at least 2 hours. The longer the better.

You can also use a bottle of BBQ sauce of course. I don't discriminate against store bought marinades. I have them in my pantry as well. Sometimes I make my own since it's really easy. As easy as grilling the chicken :) .

    I am new at cooking BBQ and I used your recipe and I have to say it came out wonderful, very juicy, I used some sweet BBQ sauce mixed with honey and brush it on when it was cooking on the grill, it was great.

    I bring my chicken to a boil, boil for 5 minutes then shut off the heat, let it set and cook in the hot water for 5 -10 more minutes then take it out of the hot water put them in cold water, heat up the grill (gas) cook them on the grill until the meat starts peeling off the bone (parts)and then rotate while applying sauce. Although I gotta tell ya, if yours taste even half as good as it looks, call us any afternoon! I will bring the beverage! MMMM. Try my "parboiling" method. P.S. I will be stealing your sauce recipe, adding ginger root and calling it my own. hehe!
