Healthy & Quick: Make a Stirfry Tonight!

When I was in the grocery store the other day I saw that the organic cabbage was on sale. Any time I see something organic on sale, I try and buy it. I know, I know, I've read about the controversy over organic foods - are they really healthier than regular fruits and vegetables? I don't know for sure, but when I have a choice over which to buy and there's only a small difference in price (like when the organic goes on sale!), I'll almost always choose the organic option. I mean, why not?

Having picked up the cabbage on short notice, I thought I'd use it as a base for a stirfry. While at the grocery store, I grabbed some carrots, Chinese peapods, onions and garlic. Once home, I chopped up the cabbage & carrots. Sliced the onions and minced the garlic. If you've ever made a strifry, you know that it's best to have all of your ingredients chopped and ready so that nothing gets overcooked.

Start with about a tablespoon of olive oil in your pot or wok, add the onions, then carrots and then the cabbage and peapods, letting each vegetable have a few minutes in the pot before adding the next. For the sauce:

3/4 c. of pineapple, apple, or orange juice
1 T. soy sauce
1 T. cornstarch
1/2 tsp. ginger
2 cloves of garlic

1. Mix the above ingredients in a small bowl with a fork. Pour into the stirfry. Mix thoroughly.

This is a quick dish to whip up. You could add chicken, beef or shrimp to make it a well-rounded meal, or just eat it as it is with a sprinkling of black (or white) sesame seeds...
