Hearty Muffins: Hot out of the Oven!

When the weather outside turns cold it's nice to have some homemade muffins around to nosh on.

Muffins make a hearty snack, and tastes great with a bowl of hot cereal!

This recipe changes every time I make it. Depending on what I have in my fridge and cupboards, that's the type of muffins I'll end up with. (Just mix and match the flour and grains as needed.)

Be sure to store bran in your freezer to prolong it's freshness.

Today's Muffins: Bran, Oatmeal, Wheatgerm and Dates

Ingredients: (This recipe makes 24 muffins)

1 c. bran
2 c. buttermilk (To make buttermilk: Add 1 T. of white vinegar to each 1 cup of milk.)
1 c. oatmeal
1 c. wheatgerm
2 c. whole wheat flour
2/3 c. vegetable oil
1 c. brown sugar
1 tsp. vanilla
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 c. dates, chopped

Directions:

1. Preheat oven to 375 degrees. Line muffin cups with paper liners.
2. Mix together bran and buttermilk. Let sit for 10 minutes.
3. Beat oil, egg, sugar and vanilla together.
4. Add bran mixture to oil mixture.
5. Stir together flour, baking soda, baking powder and salt.
6. Add bran/oil mixture to dry ingredients.
7. Fold in dates.
8. Spoon into muffin pan.
9. Bake for 13-15 minnutes until golden brown, or until toothpick inserted in the center of a muffin comes out clean.
10. Cool.

Eat one while it's still warm - yum!
