

The second dish for my new crock-pot is herb-roast chicken. It's so simple you can do it with your eyes closed. Well, literally since once you put the chicken on the pot, you can go take a nap while it cooks for hours. Of course you'll have to wake up just in time to make the side dishes :)
Buy a frozen whole chicken. Make sure it's completely thawed before cooking. Season both sides with salt, pepper and dried italian seasonings.
In the bottom of the crock-pot pan, pour a little bit of olive oil. Maybe about 2 tbsp. Coat the bottom evenly. Put the chicken on top. Cover and set it to LOW or HIGH. It depends what time you're eating dinner when you start it. I set it in HIGH coz I didn't start it till 12:30pm.
The result was an aromatic fall off of the bone roast chicken. Ahhhh, delicious. Served with mashed potatoes and buttered corn.
