Hey! You got Your Ricotta on My Greek Salad!

Alas! I went to make my favourite Greek Salad and discovered I was low on Feta cheese. Actually I just didn't have any Feta, period. I decided to think outside of the Greek box and I added Ricotta cheese to the tomatoes, cukes, red onion and oregano I had prepared.

The result? Yum! Don't forget to add some olive oil and red wine vinegar to perk up this creamy salad!
