Hot Weather Eats: Baked Salmon on the BBQ

I try to buy and eat salmon at least once a week. Everyone in the house enjoys it and the health benefits are awesome.

Salmon contains super nutrients including Omega 3 essential fatty acids. Consumption of Omega 3 oils can help to ward off inflammation as it relates to arthritis and heart diease. Remember taking cod liver oil capsules as a kid? (and burping up that awful fishy taste?) Let's face it, salmon tastes better...

I lay the salmon fillet on a piece of tin foil that is large enough to fold over and seal. I drizzle a bit of olive oil and season with salt & pepper. Fold the tin foil so the package is sealed tightly. In the summer I cook it on the BBQ, in the winter it goes in the oven.

Depending on the size of the fillet cook it 10-15 minutes. Until it is slightly flaky. Then let the salmon sit and steam in the unopened tin foil package for another 10 minutes or so. That's it!

Because salmon tastes so great this way, I've never cooked it any other way. Call me boring, but why fool with perfection?
