Kebabs : Beef, Pork and Colorful Veggies

Summer, I just love Summer. The season promises fresh fruits for cobblers, veggies for grilling, fresh corn, and a lot more things. But, one of my favorites is Kebabs. Grilled chunks of me marinated meat, colorful veggies like zucchini, yellow squash, varieties of sweet peppers, button mushrooms, onions and cherry tomoatoes. For the Marinade:
3 cups of soy sauce
juice of 4 lemons
1/2 cup of sprite
3 tbsp worcestershire sauce
sprinkle of ground black pepper
crushed 5 garlic cloves

Slice the meat in chunks. I buy a beef or pork (or both) roasts. Do the same with the zucchini, yellow squash, and sweet peppers(green, yellow or orange). Cut the button mushrooms in half or leave 'em as whole, depends how big they are. Quarter large onions.

Divide the marinade in two containers. One for beef and one for pork. Divide the vegetables as well. Put equal amounts in each container. Marinate them overnight. Before skewering the meat and veggies, soak the skewers in water for at least 2-3 minutes. This will prevent the grill from burning the skewers. Skewer the meats and veggies at least an hour before grilling coz it does take time.

Alternate with the meat, and veggies to give that colorful look. Grill each side, 8-10 minutes.

    With BBQ season in full swing, this is a good time to remind everyone that the cooked meat should never be put on the same plate as the raw meat. And, to avoid cross-contamination, remember to use soap and water to wash out the container used to bring out the raw meat before using it for the BBQ'd meat.
