Kebabs Part 2, with Grape Tomatoes

As much as we love grilling during the Summer, it seems like the only time I make our favorite kebabs with veggies is when we're attending a BBQ party. I decided to have our own BBQ party last night making pork kebabs changing a few key ingredients by subsituting them with something else for experimentation purposes.

My Kebabs marinade calls for Sprite, but I opted for ginger ale this time around just to see how it would fare. It wasn't that bad. Nothing diffrent actually. Also, I ommitted the usual zuchinnis and mushrooms. I instead used grape tomatoes at the tip to change the kebabs look a bit. I knew the grape tomatoes would grill fast, I sliced the pork thinly instead of doing it the chunky way. This way the grape tomatoes will retain it's shape and color at the same time the pork is cooked just perfectly.

For the Marinade:
3 cups of soy sauce
juice of 4 lemons
1/2 cup of ginger-ale
3 tbsp worcestershire sauce
sprinkle of ground black pepper
sprinkle of garlic powder

Marinade the thinly pork slices, chunks of green pepper, onions and grape tomatoes. Store in the fridge 3 hours at least.

Skewer the meat, then grill each side for 6-8 minutes.

Served with red potatoes salad(sans the olives) and watermelon. YUMMY. We ate a lot. It took a litlte bit longer for my son to eat his kebabs coz of the veggies but he ate them eventually, hah. He loved the potatoe salad though :) .
