How many times have you wanted to make tacos or burritos, but felt you couldn't because you didn't have the Old El Paso seasoning packet?
Well, fear not, I have figured out a great combination of spices that you can keep in your cupboard so that you can eat Mexican food anytime you get the urge to.
Making your own seasoning mix is better for you, too. There's no msg and no preservatives.
Sometimes I'll buy the taco shells, but I almost always have wraps in my freezer, which means my family eats way more burritos than tacos. Burritos wrap nicely around the mixture without breaking, so they're less messy.
Another technical difficulty I was having with Mexican food, is that I often wouldn't have the ground meat called for when you make tacos and burritos. So, to make things easier I keep a good supply of canned beans on hand.
I find that Roman Beans work the best, or even a combination of Romano Beans and Black Beans. I slightly mash the beans for a better texture.
Be sure to serve your burritos with all of the toppings - sour cream, salsa, grated cheese, lettuce and tomatoes!
Burrito/Taco Spice Mix
(This recipe makes about 7-8 burritos)
1 T. oil
2 tsp. cumin
1/2 tsp. tumeric
4 tsp. chili powder
3/4 c. ketchup
3/4 c. water
2 cans of Romano Beans, or I can of Romano Beans and 1 can of Black Beans, or substitute a 1 1/2. of ground meat.
1. Warm oil in a medium pot. Add onions.
2. Add beans, slightly mash the beans.
3. Add the rest of the ingredients.
4. Mix well. Warm throughly.
5. Serve in burritos or tacos.
(Note: If using ground meat: Brown the meat first. Skip the oil. Add the onions. Follow the rest of the recipe.)
