Making Soup Stock

Any time you have chicken or turkey bones is a good time to make soup stock.

Start with about 10 cups of water in a large pot. Simply add the bones to your pot. You can leave it at that, and simmer the mix for 30 minutes.

Or you can add onions, celery, carrots, or other vegetables to add flavour to your broth. Maybe a sprig of rosemary or thyme.

After 30 minutes, strain out the bones and any added vegetables. Use the stock right away for a soup or risotto. Alternatively, you can freeze the stock for a later use.

And, if you don't have the time to sit while the pot simmers for 30 minutes, simply stick the chicken/turkey bones into a freezer bag to make into stock at another time.

Happy Cooking,

- Lesli
