
Do you want to spruce up your grilled fish or meat? I have just the thing for you. Mango Salsa to the rescue. A very flavorful and colourful topping to any grilled dishes you may have planned for your dinner.
INGREDIENTS:
ripe mango, finely chopped
tomatoes, finely chopped
onions, finely chopped
juice of fresh lemon juice
2 tsp of vinegar
chopped fresh cilantro
sprinkle of red pepper flakes (optional)
salt and pepper to season
Just mix everything together, store in a container and put in the fridge until ready to serve. It's much better cold so make it ahead of time.

Technically it is still winter but we've been having some great weather so I took advantage of it and took the grill out from it's winter hibernation. I opted for salmon steaks to match my colourful topping. 30 minutes before grilling I marinated the fish in : olive oil, lemon juice, salt and pepper and chopped fresh parsley.
TIP: When grilling fish, put the skin side down first. It makes a lot of difference trust me.
