Mashed Red Potatoes with Caramelized Onions

This is a staple side dish in our holiday feast. Except I usually use regular potatoes. I haven't made this in a while so I decided to make it last night with red potatoes. This is very easy to make. Caramelizing the onions only uses 2 key ingredients.

Caramelized Onions
Sliced 1 large onion
1 stick of butter, or more

Melt half a stick of butter, add the sliced onions. Caramelize, adding the remaining butter. Just let it cook, until onions are brown. About an hour in a medium heat. That's all you need to do.


Mashed Red Potatoes
Wash about 5 medium red potatoes. Slice in quarters and boil in water until soft to mash. Drain the water, add the caramelized onions, season with salt, pepper, garlic powder, 2 tsp of milk, a little bit more butter. Mash. That's it.

It's really good. The caramelized onion is a good way to add a twist to just regular mashed potatoes. Perfect for a holiday's side dish.
