Mashed Sweet Potatoes with Scallions

Besides the peaches that we bought from our recent trip to the Farmer's Market, my husband also suggested we get some sweet potatoes. It actually surprised me coz he's not into eating sweet potatoes. The only time we have it is during Thanksgiving Day. But hey, who am I to question his desire of buying sweet potatoes, eh?. Especially when they look so good from the array of baskets at the market.

The usual way to cook 'em is by boiling 'till soft, then mashed, of course. What I did was slice them in chunks, boiled in water until soft enough to mash. Drained the water, added butter, a little bit of milk, then seasoned with salt and pepper. I kicked it up a notch by adding finely chopped fresh scallions on top right before serving which I mixed in together before eating. The combination of 2 textures was amazing. Soft and silky sweet mashed potatoes with crunchy scallions. Delish!

Serve with any kind of meat dishes and veggies on the side.
