
We just got back from a road trip vacation for a Family Reunion party at my in-laws's house. That means we had good food. Seriously, with all the food I ate I could live off of fat in my body. But that's not healthy so of course I still have to eat. :) . One of the dishes I enjoyed particularly was the Baked Vidalia Onion that caramelized in the oven it tasted like french onion soup. So for all of you, I took a picture and asked my mother-in-law for the recipe. You'd be surprised how easy it is.

Peel vidalia onions, core a hole in the middle, add a beef boullion and a pat of butter in the hole. Wrap in foil and cook in the oven 400F for about 30-35 minutes. VOILA. This is really good.
