Need a Quick Appetizer?

It's always good to have a few quick appetizer recipes up your sleeve. Recipes that you can just whip up at a momen't's notice - especially during the holiday season!

Here's one I came up with last week when I needed to take an appy to a party...

Let me just set the stage...I was busy with other things and I had put off actually thinking about the appetizer until the HOUR before I was supposed to arrive at the party! Needless to say, I needed to come up with something quick!

In my freezer I had a pizza crust; in my cupboard I had a jar of pesto, and in my fridge I had a small container of Boursin cheese . (It's like a fluffy cream cheese.)

I cut the crust off the pizza. Thawed the crust in the microwave on defrost for 4 minutes.

I then spread the crust with the Boursin cheese spread. To complete it, I dotted about 2-3 T. of the pesto on top of the cheese spread.

To meld the flavours together, I broiled the 'pizza' for 5 minutes.

After I let the 'pizza' cool for a few minutes (I had to go!), I used a pizza cutter to cut the 'pizza' into diamonds.

Extra easy appetizer in minutes!

...and it was a hit at the party!
