New York Cheesecake

Tonight marks the Jewish holiday of Shavo'ut. For an explanation of the holiday, see our sister blog Greetings.ca. It is customary to eat a dairy meal on Shavo'ut. Many homes serve blintzes with fruit salad, and almost every Jewish home polishes off their dairy dinner with a deliciously rich and sweet cheesecake. This is the recipe my family uses for a typical New York style cheesecake.

Ingredients:

3 (8-ounce) packages cream cheese, softened
1/3 cup granulated sugar
1 tablespoon all-purpose flour
4 large eggs, separated
1/4 cup sour cream
1/4 cup whipping cream
1 teaspoon vanilla extract
1/2 cup powdered sugar
1 (9-inch) graham cracker pie crust


  1. Preheat oven to 350°F (175°C).
    In a large mixing bowl with an electric mixer on medium speed, beat cream cheese until soft.
  2. Add sugar and flour and beat until thoroughly blended. Stir in egg yolks, sour cream, cream, and vanilla.
  3. In a separate bowl with an electric mixer on medium speed, beat egg whites until frothy, then add powdered sugar and beat to form stiff peaks. Fold the whites into cheese mixture and pour into graham cracker crust. Bake for 45 minutes, or until center is set.
  4. Cool, then chill before serving.

Makes 9 servings.
